Creating a London Dry gin necessarily requires a distillation process, with all the botanicals in the still and without any subsequent addition of any kind of ingredient.
For this purpose, we have opted for a traditional distillation following the craft experience of distillation in Galicia. Our still captures the essence of the distillate slowly, a distillation takes about 12 hours and the result is tested before it is hydrated and rested before bottling.

SELECTION OF ALCOHOL AND BOTANICALS
To make our gin, we have chosen a 100% grain (wheat) alcohol and a careful selection of botanicals from around the world. These botanicals include juniper, angelica root, cassia, orris root, coriander seed, sweet orange peel, lemon peel, cardamom, nutmeg, licorice, Ceylon cinnamon, and a few other ingredients.
MACERATION
The first thing we do is put our botanical recipe to macerate with the right proportions and time, we have sought a very high load of botanicals and with this we achieve a gin with a very persistent flavor and aroma in the glass, this makes when cooled with ice it takes on a slight bluish tone and becomes sharp and sweet.
DISTILLATION
Our distillation (hot infusion by distillation) is done in a traditional handmade still, with a very slow heating following a traditional One-Shot process in the London Dry style. Each distillation takes us about 12 hours, extracting all the essence without haste and achieving the aroma and flavor we are looking for. HYDRATION AND REST
Once distilled, we let it rest before hydration and once hydrated with our magnificent water from Galicia (the sun is always there, just covered by clouds) and brought to 43% ABV, we let it rest again before bottling so that everything fits together well.
BOTTLED AND LABELED
Finally, we bottle and label everything manually, passing through a quality control process and numbering each bottle individually, so you can take home something special.
AGED
For our BARREL AGED GIN, we take the result of our London Dry distillation and let it rest peacefully for a year in a French oak barrel…
